I love pizza, but let's face it.... sometimes it's a wee bit of a pain in the butt to make so I found an easier recipe online using pita bread in place of the regular dough and it works great for a fast meal or dinner (so fast that I made it during my one-hour lunch break today and still had time to enjoy it before heading back to work!!)Recipe
Ingredients:
Pita bread (can be with pockets or without, white or wheat)
Pasta sauce or pesto ( depending on your choice!)
Shredded mozzarella cheese
Pepperoni (turkey or regular)
Thinly sliced red onion
Chopped pepperoncinis
Sliced tomato
Olive oilItalian seasoning
Dried oregano
Dried Basil
Black pepper
Garlic powder
Hardware:
Oven
Oven rack/pizza stone/ flat bottom oven-safe dish
Pizza slicer
Knife
Cutting board
Spoon
Plate
Method:
1. Preheat oven to 375°.
2. Gather your "mis en place" and slice the onion, pepperoncinis and tomatoes.
3. Place the pita bread on the oven safe dish (Aaron and I like to freeze our pita bread so we don't have to worry about it going bad if don't eat it fast enough, therefore, before adding toppings to my pita, I defrost it in the toaster oven first for about 2 or 3 minutes or until it is thawed.)
4. Spoon pasta sauce on the pita and spread to the edges.
5. Add sliced pepperoni, sliced onion, sliced pepperoncinis and shredded cheese on top.
6. Add sliced tomatoes on top of all that.
7. Drizzle with olive oil, pepper, garlic powder, italian seasoning, dried oregano and dried basil.
8. Place in the oven on the middle rack and back for 8 to 10 minutes (check after 8 minutes to see how it's doing).
9. Take out of the oven and slice with a pizza slicer or knife!

The beauty of this recipe is that it is simple, fast and fun! It is extremely kid-friendly (set each kid up with their own pita and let them go at it!)! It's healthier than regular pizza! It is completely individual: the recipe I posted here is just one of my favorite ways to eat pizza- if you like different toppings go for it! The only thing constant in this recipe is the pita and the baking time, anything else is completely up to you!!!
